A proposal for a range of gourmet jams made using upcycled coffee-cherry pulp, a by-product of the 'wet' coffee production process. As coffee cherries are pulped in water, the fruit can be recovered and preserved on-site using locally-sourced raw sugar. The coffee-cherry pulp has a sweet, lychee-like taste and natural mild caffeine content.
